There's a big text box under every board and I have never typed a single character into any of them. Every guide says "add keywords" which tells me nothing about what a good one looks like in practice. Is it a sentence, a comma list, a paragraph? And does any human being ever read these or is it purely for the machine?

Two or three sentences, written like you're telling someone what's on the board, with the board's main phrase in the first sentence and a couple of adjacent phrases further in.
For a board called Small Living Room Decor Ideas: "Layout and decor ideas for small living rooms, including apartments and rentals. Furniture arrangement for narrow rooms, sectional and loveseat ideas, and ways to make a small space feel bigger without renovating."
That's it. Readable, hits four or five related phrases, isn't a comma list. Almost nobody reads them — the box is there for the machine — but writing them as actual sentences is what stops you producing something that reads as spam, which is the real risk with a field nobody sees.
Don't do all of them in one night either. Write the five boards you actually pin to and leave the rest empty, they're not costing you anything sitting there.
